Recipes from May Enrichment


Strawberry Freezer Jam Recipe
5 - 6 Cups washed fresh strawberries (crushed, diced or pulsed in the blender)
2 Cups or less granulated sugar
3 rounded Tablespoons Instant Clearjel
1 package unsweetened strawberry drink mix (like Kool-Aid)*
1/2 Cup light corn syrup

Whisk sugar, Instant Clearjel and drink mix together in separate bowl. Pour over prepared berries, mixing with spoon or wire wisk. Pour in corn syrup. Stir until well blended. Let set 10 minutes for jam to reach full thickness. Put into freezer containers and freeze. (If too thin add a little more sugar with more instant clearjel to thicken, or add a little water or juice to thin).

For Raspberry Freezer Jam use recipe above only substitute 5-6 cups washed, uncrushed fresh raspberries for the strawberries and raspberry drink mix instead of strawberry.

*If you prefer not to use the drink mix add a little red food color and either strawberry or raspberry extract instead.



Strawberry Pie
1 1/2 Cups sugar
5 rounded Tablespoons Instant Clearjel
a dash of salt
1 package unsweetened strawberry drink mix
2 1/2 Cups water
fresh, washed strawberries
Whisk sugar, instant clearjel, drink mix and salt together. Add water and beat until smooth and thick. Fold in berries. Pour into a baked pie crust and chill. Flavor enhances with time. Top with whipped cream.
